Semolina eggless cake – simply irresistible!

On weekends we are in holiday mood and often don’t feel like doing anything.

But sometimes getting out to do something creative makes us feel a bit better. So how do you get out to do anything if you don’t have the motivation to do it. Try a recipe you love to serve and eat to get the engines moving to spark motivation. Baking is a nice idea.

Love cakes but don’t have hours to spend in the kitchen or the expert skills it requires. Thanks to this scrumptious eggless cake having best flavour.

Serves: 6-8

Preparation time: 15 minutes

Baking time: 45 minutes

Ingredients:

Semolina (suji)           1 cup

Milk                              ½ cup

Curd                              ½ cup

Sugar                              ¾ cup (grinded and sieved)

Vanilla essence             1 tsp

Ghee                                4 Tsp

Baking powder               1/2 tsp

Meetha soda                  2 pinch

Raisins                             1 handful

Cashew nuts                    1 handful (chopped coarsely)

Method:

Roast suji without ghee in a pan.

Let it get cool at room temperature.

Mix all the ingredients in it.

Put this mixture in a greased baking dish.

Preheat oven at 180 degree C for 10 minutes.

Put the baking dish in oven and bake for 45 minutes or until cooked.

Insert a knife in the centre of the cake to check whether it is baked from inside or not. If the knife comes out clean, it means cake is ready.
