How to make Soya Chunks Salad

Soya Chunks Salad is a quick meal recipe made with olives, sweet corn, mushrooms, soya nuggets, hung curd and lettuce leaves. This nutritious and light recipe is good for health conscious people. If you're looking for a light dinner option, then this is the perfect recipe to go for. Also, it is a good alternative for vegetarian people. In this salad recipe, mayonnaise is used as a dressing, however you can also customize the dressings of your choice. Try this delicious yet healthy recipe.

How to make:

    Step 1

    For making this easy and healthy salad recipe, take a bowl and add 2 cup water in it. Boil it for a while and soak the soya nuggets in luke warm water for an hour or so. This will make the nuggets soft. Drain, cool, squeeze the chunks and keep them aside.

    Step 2

    Wash all the vegetables in cold running water. Pat them dry and chop them finely or as per your preference. Once done, keep them aside.

    Step 3

    Now is the time to add in the flavours to the salad. Take another bowl and mix in all the ingredients of the toppings and chill in the refrigerator. The salad tastes even better when the dressing is chilled.

    Step 4

    Now take a wok and heat it over moderate flame. Add the prepared soya chunks in the wok and stir-fry them till they turn golden in colour. Stir-frying the soya chunks will give a crunch to the salad recipe. Remove and keep them aside.

    Step 5

    Now in the same wok, add onions and capsicums. Saute both of them just for few second so that they get slightly crunchy. Once they are done, remove in a bowl and keep aside. Heat the same wok over high flame and add in mushrooms. Stir-fry the mushroom for half a minute or so and remove from flame.

    Step 6

    Bring the cooked vegetables to room temperature. Now take a bowl and mix all the vegetables along with the salad greens. Keep the bowl in the refrigerator for a while now.

    Step 7

    Once all the veggies are chilled, pour the dressing onto the salad just before serving and sprinkle some of the baked croutons. Healthy yet delicious salad is ready to eat. Try this easy salad recipe.
