Ingredients of Oatmeal and Mushroom Stir Fry:

2 cup rolled oats
1 cup oyster mushroom
1 tablespoon chopped garlic
salt as required
6 sprigs thyme
4 egg
2 cup button mushroom
1 tablespoon virgin olive oil
1 chopped onion

crushed peppercorns as required
1 cup shredded spinach

How to make Oatmeal and Mushroom Stir Fry:

Step 1

To prepare this delicious breakfast recipe, put a non-stick pan on medium flame and dry roast till light golden in colour. Once done, remove the pan from the burner and set aside. Next, heat one tablespoon olive oil in another non-stick pan on medium flame. When the oil is hot enough, add the chopped garlic in it and saute till golden in colour. Then, add the onion in the pan and saute till translucent and golden.

Step 2

Then, add the button and oyster mushrooms in the pan along with salt, crushed peppercorns and torn thyme sprigs. Mix well and turn the flame to high, stir fry the mushrooms for two to three minutes.

Step 3

Add three cups of water in the pan, mix well with the mushrooms and bring it to a boil. Turn the flame to medium and add the roasted oats in it. Stir continuously till the oats and mushroom are cooked. Afterwards, add the chopped spinach and mix once again. Cook for about 5 minutes and remove the pan from burner.

Step 4

Now, heat some olive oil in another non-stick pan. Crack open an egg in it and sprinkle some salt and crushed peppercorns as per your taste, cook the omelette till golden from the underside. Transfer to a plate and similarly, prepare the the remaining eggs.

Step 5

Finally, for serving the dish, put some oats and mushroom mixture on individual serving platters, place one fried egg on top and serve hot.
